Okay, so today I messed around in the kitchen and whipped up this 7 bean soup. It all started when I found a dusty bag of mixed beans in the back of the pantry. I figured, why not give them a new life, right?
First off, I picked out a big old pot, the one I usually use for big batches of stuff. Then I dumped all the beans into it. I filled the pot with water, making sure those beans were fully covered, like giving them a little bath. I let them soak overnight. I heard somewhere that this helps them cook better and faster.
The next day, I drained the water, gave those beans a good rinse, and put them back in the pot. I added fresh water, enough to cover them again. I also tossed in some chopped onions, a few cloves of garlic cause I’m a garlic fan, and some carrots and celery I had lying around. Oh, and a bay leaf. Don’t ask me why, it just felt right.
I cranked up the heat and brought the whole thing to a boil. Then, I turned it down to a simmer, slapped a lid on, and just let it do its thing. I checked on it now and then, gave it a little stir. After about an hour and a half, those beans were nice and tender.

Then I seasoned the soup with some salt, pepper, and a pinch of smoked paprika for that extra kick.
Tasting Time
I ladled out a big bowl of this 7 bean soup. It was hearty, it was flavorful, and honestly, it was way better than I expected. A total win for a lazy day experiment. And the best part? I’ve got plenty left for the week. Soup for days, my friends, soup for days.
