Ya know, I saw somethin’ called “pork con tiki” the other day. Sounded fancy, like somethin’ them city folks make. But, shoot, I figured, pork’s pork, right? So, I tinkered around and made somethin’ kinda similar, I reckon. Easy peasy, too.
First off, get yerself some pork. I used them chops, the cheap ones. Cut ’em up into little pieces, not too big, not too small. Like, bite-sized, ya know? Put ’em in a bowl. Now, for the fun part. We gotta make ’em taste good.
I rummaged around and found some pineapple juice. Poured some of that in with the pork. Sweetens it up real nice. Then, a splash of soy sauce, for saltiness. And, uh, what else? Oh yeah, a bit of garlic powder. Good for the heart, they say. And some ginger, if ya got it. Makes it kinda zingy.
Mix it all up good with yer hands. Get them juices right into the meat. Let it sit for a bit, soak up all that flavor. While that’s happenin’, get yer pan ready. A big ol’ skillet works best. Put it on the stove, medium heat.
Now, toss them pork pieces in the pan. Let ’em sizzle and brown up. Flip ’em around so they cook even. Ya want ’em cooked through, but not dry like shoe leather. While they’re cookin’, ya can add some peppers. I used them green ones, but any color will do. Slice ’em up and throw ’em in. Gives it a little crunch and color.
And the sauce, gotta have sauce. Remember that pineapple juice? Pour a bit more into the pan. Let it bubble and thicken up a bit. If ya like it sweet, toss in a spoonful of brown sugar. Or honey, if that’s what ya got. A squeeze of lime juice adds a tang. Makes it taste… well, tropical, I guess. Like them tiki drinks, maybe?
- Get pork, cut it up.
- Mix with pineapple juice, soy sauce, garlic powder, ginger.
- Cook in a pan, add peppers.
- Make a sauce with pineapple juice, sugar or honey, lime juice.
Serve it up with some rice. Plain white rice is fine. Or, if ya feelin’ fancy, some coconut rice. That’d be real nice. And there ya have it. Pork con… whatever ya wanna call it. It ain’t fancy, but it’s good eatin’. My grandkids loved it, even the picky one. Said it tasted like a vacation. Imagine that! A vacation on a plate.
Ya know, cooking ain’t rocket science. Just throw some things together, taste it along the way. If it ain’t right, add somethin’ else. That’s how I do it. No need for fancy recipes or fancy words. Just good, honest food.
