Alright, listen up, y’all. We’re gonna talk about this low potassium thing, ya hear? Doc says my potassium’s gotta be kept in check, so I figured, why not share what I’m eatin’? This ain’t no fancy stuff, just plain ol’ good food that won’t make your potassium go sky high.
So, here’s what I eat in a week, more or less. Remember, I ain’t no doctor, just a woman who likes to eat good without gettin’ sick.
Day 1
Breakfast: I start my day with a small apple, sliced up. Sometimes I’ll have a little bit of white bread toast, you know, the soft kind, with a tiny bit of butter. And a cup of weak coffee, gotta have my coffee.
Lunch: I make myself a chicken salad sandwich. Use that white bread again, and just plain cooked chicken, no fancy spices or nothin’. Maybe a little bit of mayo, but not too much. And some sliced cucumbers on the side, they’re good for ya.
Dinner: I bake some chicken breast, just plain, with a side of white rice. And some cooked green beans, gotta get my veggies in.
Day 2
Breakfast: I switch it up sometimes and have some watermelon. Just a small slice, don’t need too much. And that weak coffee again.
Lunch: Leftover chicken from last night, chopped up and put in a salad with some lettuce and a little bit of oil and vinegar dressing.
Dinner: I make a small piece of beef, like a little steak, but cooked real good so it’s soft. And some mashed potatoes, but I don’t use too much milk, gotta keep that potassium down. A few slices of pear for dessert.
Day 3
Breakfast: A pear today, they’re sweet and good. And a piece of that white toast with just a smidge of butter. Coffee, always coffee.
Lunch: Egg salad sandwich! Boiled eggs, mashed up with a little mayo, on that white bread. Some sliced red peppers on the side, they add a little crunch.
Dinner: Pork chop, not too big, cooked till it’s tender. Some white rice again, and some kale, cooked soft. It ain’t the tastiest, but it’s good for ya.
Day 4
Breakfast: A few blueberries and that toast with a little butter. And, you guessed it, coffee.
Lunch: Leftover pork chop, sliced thin, with some lettuce and a tiny bit of that oil and vinegar dressing.
Dinner: I cook up some chicken and make a kind of soup. Just chicken, some white rice, and a little bit of onion and garlic for flavor. And a small piece of watermelon after.
Day 5
Breakfast: I might have a little bit of that strawberry Greek yogurt, not the big kind, just a small one. And a few strawberries on top. Oh, and a little bit of granola, the kind without too much stuff in it.
Lunch: Tuna salad sandwich on white bread. Canned tuna, drained good, with a little mayo. And some sliced cucumbers.
Dinner: I bake some fish, like cod or somethin’ similar, just plain. And some mashed cauliflower, it’s kinda like mashed potatoes but without all the potassium. And a small apple for dessert.
Day 6
Breakfast: A clementine, those little oranges, and that white toast, you know the drill. And coffee, of course.
Lunch: Leftover fish, flaked up and put on a salad with lettuce and a little bit of oil and vinegar.
Dinner: I make a beef stew, but real simple. Just beef, some carrots, and some potatoes, but I don’t use too many potatoes. Gotta watch that potassium.
Day 7
Breakfast: Some sliced pears and the white toast with just a little bit of butter. And my coffee.
Lunch: Chicken salad sandwich again. It’s easy and I like it. With some sliced red peppers.
Dinner: I roast some chicken, just plain, with some white rice and cooked green beans. And a small piece of watermelon for a treat.
Now, remember, this is just what I do. You gotta talk to your doctor and figure out what’s right for you. And don’t go eatin’ a whole bunch of anything, keep your portions small. This ain’t no fancy diet, just good, plain food to keep that potassium in check. And drink plenty of water, that’s always good for ya.
