A little bit of this, a little bit of that. Some salt, some pepper, maybe a little allspice, if I can find it. Don’t be shy with the spices, ya hear? Soup needs flavor, it can’t be bland, nobody likes bland soup.

Okay, so the chicken’s in the pot, the water’s in there, the spices are in there… Now we let it simmer. Not boilin’ like crazy, just a nice, gentle simmer. Let that chicken cook for a good long while, until it’s nice and tender. You don’t want no tough chicken in your soup, that’s just a waste.
While the chicken is simmering, we gotta get our vegetables ready. Now, this is where it gets good. We’re talkin’ yam, pumpkin, maybe some carrots, potatoes… whatever you got on hand, really. Don’t be afraid to throw in whatever vegetables you like. It’s your soup, you can put whatever you want in it.
Peel them vegetables, chop them up into bite-sized pieces, and when the chicken is cooked, you toss them right into the pot. Let it all simmer together for a while longer, until the vegetables are nice and soft.
Now, some folks like to add dumplings to their Jamaican chicken soup. And you know what? Dumplings are good! If you want to add dumplings, go right ahead. I ain’t gonna stop ya. Just mix up some flour and water, make little balls, and drop ‘em in the soup. They’ll cook up nice and fluffy.
