Alright, alright, let’s talk about this here… whatchamacallit… Paula Deen Taco Soup. Yeah, that’s it. Now, I ain’t no fancy cook, ya hear? I just make food that fills ya up and tastes good, the kinda stuff my grandma used to make. And this soup, well, it’s just that kinda food.
First off, ya gotta get some ground beef. Don’t go gettin’ that fancy lean stuff, get the regular kind, ya know, the one with some flavor. Brown it up in a big ol’ pot. I use my grandma’s old cast iron one, but any big pot will do. Chop up an onion, not too fine now, just kinda rough, and throw it in with the beef. Cook it all together till the beef ain’t pink no more and the onions are soft.
Then, the secret ingredient… well, it ain’t no secret, but it’s what makes it taste so good. Enchilada sauce! Yep, that’s the stuff. Pour in a whole can, maybe two if you’re feedin’ a bunch of hungry folks. Stir it all up good.
- Now, for the rest of the fixin’s. You’ll need some beans. I like pinto beans, but kidney beans work too. Just open up a can and dump ’em in.
- And corn! A can of corn, drained. Don’t want it too watery, ya know.
- Then some diced tomatoes. Again, a can. See, I told ya this was easy.
- Some folks like to add a little chili powder or cumin. I do sometimes, depends on my mood. A little bit goes a long way, so don’t go overboard.
Okay, so you got everything in the pot. Give it a good stir and bring it to a boil. Once it’s boilin’, turn the heat down low and let it simmer. The longer it simmers, the better it tastes. At least an hour, I say. But if you’re in a hurry, half an hour will do. Just keep an eye on it, ya don’t want it to stick to the bottom of the pot.
Now, while that’s simmerin’, let’s talk about what to put on top. Toppings, they call ‘em. I like shredded cheese, lots of it. And sour cream, that’s good too. Some folks like chopped onions or cilantro, but I ain’t too fancy for that. Oh, and don’t forget the tortilla chips! Crush ‘em up and sprinkle ‘em on top, or just dip ‘em in the soup. Either way works.
This Paula Dean Taco Soup, it ain’t nothin’ fancy, but it’s good eatin’. It’s the kind of food that sticks to your ribs and warms you up on a cold day. And the best part is, it’s easy to make. Even a blind hog can find an acorn, and even I can make this soup, so you know it’s gotta be simple.
