Alright, let’s talk about this here chicken and yellow rice thingy, casserole they call it. Fancy name for a hot dish, if you ask me.
First off, you gotta get yourself some chicken. Now, I ain’t picky. You can use them breast pieces, them leg things, or even the whole dang bird if you feelin’ fancy. Just make sure it’s cooked. I usually boil it ’til it’s fall-off-the-bone tender. Ain’t nobody got time for chewin’ on tough chicken, ya know? Make sure that chicken is cooked through, you don’t want nobody getting sick.
Then comes the rice. Now, I like the yellow kind. Makes it look all purdy and whatnot. You can use that white rice too, I guess, but the yellow’s just prettier. Cook it up like you always do. Nothin’ special there.
- Get your chicken
- Cook your rice
- Find some vegetables, if you want
Now, some folks like to put all sorts of green stuff in their casserole. Broccoli, cauliflower, whatever they got growin’ in their garden I reckon. Me? I ain’t a big fan of them greens, but if you like ’em, go ahead and throw ’em in. Just chop ’em up small so they don’t stick out too much. My grandbaby, she loves the green stuff, so sometimes I put a little bit in for her. Makes her happy, you know?
Here’s the secret though, the thing that makes it all creamy and dreamy. It’s that cheese stuff. Velveeta, they call it. Comes in a big ol’ block. You gotta cut it up and melt it down. That’s what makes it all gooey and good. Some folks use that other cheese, the shredded kind. That works too, I guess. But I like that Velveeta. It melts real nice.
So, you got your chicken, your rice, your maybe-greens, and your melty cheese. Now what? Well, you gotta mix it all together. Big ol’ bowl, just dump it all in and stir it up good. Make sure everything’s coated in that cheesy goodness. Don’t be shy, get in there and mix it up real good. That’s the only way to make sure everything gets coated in that cheesy goodness.
Then you gotta bake it. Yeah, stick it in the oven. 350 degrees, they say. I don’t know why, but that’s what they say. Bake it ’til it’s bubbly and brown on top. You’ll know when it’s done. It’ll smell real good and the cheese will be all melted and gooey. You don’t want to overcook it, or it’ll get all dry and tough. Just keep an eye on it and take it out when it looks done.
And that’s it. Chicken and yellow rice casserole. Simple as that. Ain’t nothin’ fancy, but it’s good eatin’. Fills you up and warms you up on a cold night. My grandkids love it. They always askin’ for it. And that’s good enough for me.
Now, some folks, they put all sorts of fancy stuff in their casserole. Cream and butter and whatnot. Me? I keep it simple. Chicken, rice, cheese. That’s all you need. Why make it complicated when it don’t need to be? That’s what I always say. Keep it simple, stupid. That’s my motto.
Oh, and I almost forgot! You gotta put it in a pan, ya know? A big ol’ pan. Glass one, metal one, don’t matter much. Just make sure it’s big enough to hold all that food. And grease it up a little, so it don’t stick. Nothin’ worse than tryin’ to scrape stuck food outta a pan. A little bit of butter or oil will do the trick. Just rub it around the bottom and sides of the pan, and you’re good to go.
So there you have it. My recipe for chicken and yellow rice casserole. It ain’t written down nowhere, just in my head. But it’s a good one, trust me. My family’s been eatin’ it for years. And they ain’t complained yet. So go on, give it a try. You might just like it.
This here dish, it ain’t the healthiest thing in the world, I’ll give you that. But sometimes, you just need a little comfort food, you know? Something warm and cheesy to fill you up. And this here casserole does the trick. It’s not something you should eat every day, but once in a while, it’s alright. Everything in moderation, that’s what I say. Now, get to cooking, and don’t forget to wash your hands!
