Okay, so today I decided to tackle a seafood stir-fry. I’ve seen a bunch of recipes online, but honestly, I just kinda winged it with what I had in the fridge and freezer.

Getting Started
First, I thawed some frozen shrimp and scallops. I just put them in a bowl of cold water for like, 20 minutes. While that was happening, I chopped up some veggies. I had an onion, some bell peppers (red and yellow, because I like the color!), and a bunch of broccoli florets.
Cooking the Seafood
Once the seafood was thawed, I patted it dry with paper towels. This is important, or it won’t get a good sear. I heated up some oil in my wok – you can use a large skillet too – over medium-high heat. When it was nice and hot, I tossed in the shrimp and scallops. I stirred them around for just a few minutes until they were pink and cooked through. Don’t overcook them, or they’ll get rubbery! I took them out of the wok and set them aside.
Stir-Frying the Veggies
Next, I added a little more oil to the wok and threw in the onions. I cooked those for a couple of minutes until they started to soften, then I added the bell peppers and broccoli. I stir-fried everything for about 5-7 minutes, until the veggies were tender-crisp. I like them to still have a little bit of a bite.
Making the Sauce (Sort Of)
Honestly, I didn’t really make a “sauce.” I just squeezed in some lemon juice, sprinkled on some garlic powder, salt, and pepper. I also added a dash of soy sauce for a little extra flavor. You can get fancy with a real sauce, but I was keeping it simple today.
Putting It All Together
Finally, I added the cooked seafood back into the wok with the veggies. I tossed everything together to combine and let it heat through for a minute or two. And that’s it! Seafood stir-fry, done.
Serving
- I served in the bowls.
- I put a little bit hot sauce that I made a few weeks ago.
- I served it over some rice I had leftover from yesterday.
It was super easy and pretty quick, especially since I used frozen seafood. Plus, it’s a great way to use up whatever veggies you have on hand. Def a win in my book!
