Now, if y’all ever want somethin’ hearty and easy to make, I got a recipe for ya that’s gonna fill your belly up good. It’s a simple one, just like how we do things around here. What we’re makin’ today is a dish with hamburger, green beans, tomato soup, and mashed potatoes. Sounds good, don’t it? Let me tell ya, it’s one of them meals that’s been passed down in the family, and every time I make it, it don’t last long on the table.
Now, first thing you wanna do is grab yourself some ground beef. A pound’ll do, but if you got a big family, you might wanna make more. Just take that beef and toss it in a big ol’ pan. You also want to add a chopped onion to the mix. I know, onions make you cry, but they sure make the dish taste good, so don’t skip it. Brown that beef and onion together real nice until it’s all cooked through. Once it’s done, make sure to drain out the fat. We don’t need all that grease, it’ll just make the dish too heavy.
Now, after that, you’re gonna wanna add your green beans. Don’t go pickin’ fresh ones unless you got ’em in your garden. Canned green beans will do just fine. Drain ’em and throw ’em in the pan with the beef and onions. Stir it all up good-like so the beans get a nice coat of that beefy flavor. Next, open up a can of tomato soup. Yep, just the regular kind. You don’t need anything fancy here, just a good ol’ can of soup. Pour it in with the beef and beans, give it a good stir, and let it simmer for a bit. You can add a little salt and pepper to taste, but that’s about all the seasoning you need. Ain’t no need to get too fancy with this one.
While that’s cookin’ away, you can start workin’ on your mashed potatoes. Now, you can either boil up some taters or just use the instant kind if you’re in a rush. Me, I like to boil them myself, peel ’em, and mash ’em up nice and smooth. Don’t forget to add a little butter and milk to make ’em creamy. Ain’t no one wantin’ dry mashed potatoes. Make sure they’re nice and fluffy before you put ’em on the casserole.
Once your beef mixture is all done and your mashed potatoes are ready, it’s time to put it all together. Grab a casserole dish and start with that beef and green bean mixture. Spread it out evenly in the bottom. Now, take your mashed potatoes and spread them over the top like a big ol’ blanket. Cover up the whole dish. Don’t be shy with those potatoes, the more, the better. You wanna make sure every bite has a little bit of them taters on top.
Now, pop that casserole in the oven. You don’t need to cover it, just leave it open and let it bake at 350°F for about 20-25 minutes, or until the top of the mashed potatoes starts to get a little golden. The smell in your kitchen is gonna make you wanna eat it right there, but hold tight, it’ll be worth the wait.
When it’s all done, take it out and let it cool for a few minutes before you start dishin’ it up. You can serve it as is, or if you want, sprinkle a little cheese on top before it goes in the oven for some extra flavor. Either way, you got yourself a good ol’ fashioned meal that’s sure to fill you up and warm you from the inside out. My family loves it, and I’m sure yours will too.
