So, the other day I was craving something warm, cheesy, and comforting, but I also wanted to feel somewhat healthy. I scrolled through a bunch of recipes and finally decided to try making a broccoli corn casserole. I’d never made one before, so it was a bit of an experiment!
Getting Started
First, I gathered all my ingredients. I already had some frozen broccoli and corn, which was a good start. I also grabbed some cheddar cheese (because, duh!), some milk, butter, flour, and breadcrumbs from the pantry. I wasn’t following a specific recipe, more like winging it based on what I thought would taste good.
The Process
I started by cooking the broccoli and corn. I just steamed them in the microwave until they were tender-crisp. While that was going, I melted some butter in a saucepan. Then I whisked in some flour to make a roux, you know, the base for a cheese sauce. It took a few minutes of stirring until it was smooth and bubbly.
Next, I slowly poured in the milk, stirring constantly to avoid lumps. I let it simmer for a bit until it started to thicken. Then came the best part – I dumped in a whole bunch of shredded cheddar cheese and stirred until it was all melted and gooey. I added some salt and pepper, just a pinch of each.
Once the cheese sauce was ready, I mixed in the cooked broccoli and corn. I poured everything into a greased baking dish. Then, for a little extra crunch, I sprinkled some breadcrumbs on top. I did not have Panko, to bad!
Baking and Enjoying
I popped the casserole into a preheated oven at, like, 375 degrees (Fahrenheit, of course!). I baked it for about 20-25 minutes, until it was bubbly and golden brown on top. It smelled amazing!
I let it cool for a few minutes before scooping out a big portion. It was super cheesy and delicious! The broccoli and corn still had a bit of bite to them, and the breadcrumbs added a nice texture. Honestly, it was way better than I expected, especially since I was just making it up as I went along.
