Okay, so I’ve been trying to find some easy, weeknight dinner recipes, and I stumbled upon this ground turkey and potato casserole. I figured, why not? I had most of the ingredients, and it sounded pretty hearty and satisfying. So, here’s how it went down.

Getting Started
First, I grabbed a pound of ground turkey. I usually go for the leaner kind, but you do you. I also needed some potatoes. I had a bag of russets, so I peeled and diced about three medium ones. You want them to be bite-sized, so they cook evenly.
Cooking the Turkey
I browned the turkey in a large skillet over medium-high heat. You know, just cook it until it’s not pink anymore. I made sure to break it up into small pieces with a spoon as it cooked. Once it was done, I drained off any excess grease. Nobody wants a greasy casserole.
Adding the Flavor
After draining the grease, I tossed in a diced onion and a couple of cloves of minced garlic. I stirred that around and let it cook for a few minutes until the onion was soft and see-through. Then, for some extra flavor, I added a packet of taco seasoning. You can also use your own blend of spices, like chili powder, cumin, and paprika. Whatever floats your boat.
- If it’s too dry add a little water.
Mixing It All Together
Next, it was time to add the potatoes. I dumped those in the skillet with the turkey and gave everything a good stir. Then, I poured in a can of cream of mushroom soup and a can of diced tomatoes. I also added a cup of frozen corn because I like the sweetness it adds. For more flavor, I put salt, pepper in it. You can also add some shredded cheese if you are feeling cheesy!
Time to Bake
I transferred the mixture to a greased 9×13 inch baking dish. I spread it out evenly, so it would cook evenly, you know? Then, I covered it with foil and popped it in the oven, which I had preheated to 350°F (175°C).
I let it bake for about 45 minutes, then I removed the foil and baked it for another 15 minutes, until the potatoes were tender, and the top was all bubbly and golden brown. If you added cheese, this is when it gets all melty and delicious.
The Final Result
I pulled the casserole out of the oven and let it cool for a few minutes before serving. Honestly, it smelled amazing. It was a super satisfying and easy meal. You can top it with some sour cream, green onions, or even a little hot sauce if you like. It’s a great way to use up leftover ground turkey, and it’s definitely a crowd-pleaser.
