Alright, so, today I’m gonna share how I whipped up a killer side dish that goes perfectly with BLTs. Seriously, it’s so easy, even I can’t mess it up, and that’s saying something!

First things first, I started by raiding my fridge. I had some leftover corn on the cob from yesterday’s BBQ, a bell pepper that was starting to look a little sad, and half an onion. Figured, “Hey, let’s make this work!”
I grabbed the corn and sliced the kernels right off the cob. I just stood the cob up on its end and ran my knife down. It’s messy, but it’s quick. Then, I diced that bell pepper and onion into small pieces. Nothing fancy, just small enough to cook evenly.
Next, I heated up a skillet with a little bit of olive oil. Not too much, just enough to coat the bottom. I tossed in the onions and peppers and let them cook for a few minutes until they started to soften up. You want them a little tender, not mushy.
Once the veggies were looking good, I threw in the corn kernels. I also added a can of black beans that I rinsed really well. Gotta get rid of that weird bean juice, you know?
Now for the flavor! I sprinkled in some chili powder, cumin, and a little bit of smoked paprika. I didn’t measure anything, just eyeballed it. You can always add more, right? I also squeezed in some lime juice. This brightens everything up and adds a nice tang.
I let everything cook together for about 5-10 minutes, stirring occasionally, until the corn was heated through and the flavors had melded together. It smelled amazing at this point. Seriously, my stomach was growling!
Finally, I took it off the heat and stirred in some chopped cilantro. If you’re not a cilantro fan, you can skip it, but I think it adds a nice fresh touch. And that’s it! I spooned it onto a plate next to my BLT, and bam! Instant deliciousness.

Honestly, this is a great way to use up leftover veggies, and it’s way healthier than chips or fries. Plus, it adds a little bit of color and texture to your plate. Give it a try, you won’t regret it!
