Okay, so today I decided to try something new with my lingcod – I blackened it on the grill. I’d heard a lot about this method and I was pretty excited to give it a go. First off, I grabbed my lingcod fillets. This fish is great because it’s got a mild taste and is nice and flaky. I wanted that smoky flavor, so blackening seemed like the perfect way to go.
I went and fired up my trusty grill. Now, I learned that grilling and blackening are similar but not quite the same. Grilling is, well, you know, just cooking on a grill. But blackening is about this special mix of spices and how you coat the food. I got myself some blackening seasoning – it’s this Cajun blend that’s all smoky and savory. I’ve used it on chicken and veggies before, but never on fish.
Here’s what I did:
- I patted the lingcod fillets dry with some paper towels. This is important, you want that seasoning to stick!
- Then, I generously sprinkled the blackening seasoning all over the fish. I made sure to get both sides coated real good.
- I got my grill nice and hot, then I placed the seasoned lingcod fillets right on the grates.
- I cooked them for about 4-5 minutes on each side. You want them cooked through but still nice and moist.
- Once they were done, I took them off the grill and let them rest for a couple of minutes. I heard this helps the juices redistribute, making the fish even tastier.

Man, let me tell you, the smell while these were grilling was amazing. That smoky seasoning really did its thing. When I finally took a bite, it was delicious! The lingcod was perfectly cooked, flaky, and that blackening seasoning gave it such a great kick. I’ve also heard that some folks like to just season their cod with sea salt and black pepper before cooking. That sounds pretty good, too. Cod apparently tastes great that way. Someone told me that if you want to marinate cod, you should cook it in folded paper in the oven. You won’t get the browning, but you’ll keep the flavor. Good to know!
Anyway, this was a total win. If you’ve got some lingcod and you’re looking for a new way to cook it, definitely try blackening it on the grill. It’s easy, it’s fast, and it’s super tasty!
