Okay, so I’ve been seeing these rice cookies all over my social media, and the Quaker Oats ones kept popping up. I figured, why not give them a shot? I mean, I love rice cakes, and I love cookies, so… seemed like a win-win, right?

First things first, I grabbed my ingredients. I already had a big container of Quaker Oats – the old-fashioned kind, not the instant stuff. Then I checked my pantry and, luckily, I had everything else: brown sugar, regular sugar, butter (gotta have that!), an egg, some vanilla extract, baking soda, a pinch of salt, and… oh yeah, rice! I used plain, cooked white rice that I had leftover from dinner the other night.
Mixing it All Up
I started by creaming together the softened butter and both sugars. I just used a hand mixer, nothing fancy. Then I beat in the egg and vanilla. In a separate bowl, I whisked together the dry stuff: the oats, baking soda, and salt.
Slowly, I added the dry ingredients to the wet ingredients, mixing until it was just combined. Don’t overmix! That’s a big cookie no-no, makes ’em tough. Finally, I folded in the cooked rice. It felt a little weird, I’m not gonna lie, adding rice to cookie dough, but I trusted the process (sort of).
Baking Time!
I preheated my oven to 350 degrees Fahrenheit. While that was heating up, I dropped spoonfuls of the dough onto a baking sheet lined with parchment paper. I made sure to leave some space between them, because nobody likes cookies that have merged into one giant mega-cookie.
I baked them for about 12-15 minutes. The edges were starting to turn golden brown, and the centers still looked a little soft. That’s how I like ’em, anyway. If you like them crispier, you could probably leave them in for a few more minutes.
The Verdict
- Texture: Surprisingly good! The oats gave them a nice chewiness, and the rice added a… well, a rice-y texture. It’s hard to describe, but it worked!
- Taste: They were definitely sweet, but not overly so. The vanilla came through nicely, and the butter made them rich.
- Overall: I’d make them again! They were pretty easy, and it’s a fun way to use up leftover rice. Plus, it’s a slightly different take on a regular oat cookie. I might even try adding some chocolate chips next time… because, why not?
So, yeah, that’s my experience with Quaker Oats rice cookies. Give them a try if you’re feeling adventurous! They might just surprise you.
