Okay, so I decided to make halibut for dinner tonight. I love halibut, but it’s kinda plain on its own, right? So, I needed to figure out some good side dishes. I wanted something that wouldn’t overpower the delicate flavor of the fish, but would still be interesting. Plus, I’m not a chef, okay? I need stuff that’s pretty easy to throw together.

My Side Dish Quest
First, I poked around online for some ideas. I saw a lot of recipes, some simple, some looked way too complicated. I was thinking about what I had on hand already, trying to avoid another grocery store trip.
I decided to go with two sides: a simple salad and some roasted asparagus.
The Asparagus Triumph
Asparagus is my go-to, it’s super quick. I washed the asparagus and snapped off the tough ends. You know, the part where it naturally breaks? Much easier than cutting! Then I just tossed them on a baking sheet with:
- A little olive oil
- Salt
- Pepper
- Garlic powder (because I put that stuff on everything!)
I popped that in the oven at 400 degrees. I didn’t even time it, just kept an eye on it until it was tender and a little crispy. Maybe 15-20 minutes?
The Salad Situation
For the salad, I wanted something fresh and light. I already had some mixed greens, so I threw those in a bowl. Then, I added:
- Some sliced cherry tomatoes
- Cucumber
- A simple vinaigrette dressing
I could buy a bottle from store. Nothing fancy.
Seriously, that was it. I didn’t want to get too crazy with the salad because, let’s be real, the halibut and asparagus are the stars of the show.

The Final Result!
The halibut I just pan-fried with a little butter and lemon. Once everything was ready, I plated it all up. It looked pretty good, if I do say so myself! And more importantly, it tasted delicious. The asparagus was perfectly roasted, the salad was refreshing, and the halibut was flaky and flavorful. Success!
I am pretty proud of myself. I made a healthy and tasty meal without spending hours in the kitchen or using a million ingredients. Definitely adding this to my regular dinner rotation!
