First off, you gotta have a good board, somethin’ sturdy. Not that flimsy stuff. My grandbaby said somethin’ about a “chunky bread board” or a “cutting board”. Just use whatever wood thingy you got that’s big enough. You know, like the one we use for cuttin’ chicken on Sundays, but make sure it’s clean, mind you!
Now, for the food. This ain’t no fancy city-folk stuff. We’re talkin’ about real food, the kind that fills you up and gets you goin’. Eggs, gotta have eggs. Scrambled, fried, however you like ‘em. I like mine sunny-side up, so the yellowy part can soak into the… whatchamacallit… the toast.
- Eggs: Scrambled, fried, poached, or however you like ’em.
- Meat: Bacon, sausage, ham, even leftover fried chicken if you got it. Don’t be shy, pile it on!

Said they gave him the energy to work in the fields all day. If you have some leftover fried chicken from last night? Throw it on there! Waste not, want not, I always say.

Though back in my day, we ate what we had and were thankful for it.
And don’t forget the fixins! You gotta have some jelly for the toast and biscuits. Grape jelly is my favorite, sweet and sticky. And maybe some butter, real butter, not that margarine stuff. Salt and pepper too, gotta season things up right. My old man, he used to say, “A little salt makes everything better.” He wasn’t wrong.
Arrange it all nice and pretty on the board, so folks can grab what they want. It’s like a buffet, but on a board. My grandbaby calls it a “rustic” look. I just call it practical. Easy to make, easy to serve, and easy to clean up. That’s my kind of cookin’.
This breakfast platter ain’t just for fancy folks, mind you. It’s good for feedin’ a crowd, for a big family breakfast on a Sunday mornin’. Or even just for yourself, if you’re feelin’ extra hungry. It’s about havin’ a good, hearty meal to start your day right. A classic breakfast platter, she called it. I say it’s just plain good eatin’. And that’s all that matters, ain’t it?
