Hey everyone, so I tried making cream of celery soup with macaroni today, and let me tell you, it turned out pretty darn good! I wanted to share my experience with you all, from start to finish.
Getting Started
First, I gathered all my ingredients. Now, I’m no expert, but I’ve found that having everything ready makes cooking way less stressful. I grabbed some celery, onions, garlic, potatoes, chicken broth, heavy cream, and of course, macaroni. It’s a pretty simple list, and I already had most of it in my pantry.
Chopping and Prepping
Next up, I washed and chopped the celery, onions, and garlic. I also peeled and diced the potatoes. I gotta say, chopping veggies is kind of therapeutic for me. Plus, it makes the kitchen smell amazing!
Sautéing the Aromatics
Once everything was chopped, I heated some butter in a big pot and tossed in the onions and garlic. I sautéed them until they were nice and soft, about 5 minutes. The smell was heavenly—I could’ve just eaten that as is!
Adding Celery and Potatoes
After that, I added the chopped celery and potatoes to the pot. I stirred everything together and let it cook for another 5 minutes or so. I wanted the celery to soften up a bit before moving on to the next step.
Pouring in the Broth
Next, I poured in the chicken broth. I made sure there was enough to cover all the veggies. I brought the whole thing to a boil and then reduced the heat to a simmer. I covered the pot and let it cook for about 20 minutes, until the potatoes were fork-tender.
Blending Time
This is where the magic happens. I carefully transferred the soup to my blender. Now, be careful here—hot soup can be dangerous! I blended it in batches until it was smooth and creamy. You could also use an immersion blender if you have one. But I like that it tastes nice and light, but indulgent enough so I don’t notice that I’m eating something healthy.
Cooking the Macaroni
While the soup was blending, I cooked the macaroni according to the package directions. Once it was done, I drained it and set it aside.
Combining Everything
I poured the blended soup back into the pot and stirred in the cooked macaroni. I also added the heavy cream at this point. I heated it through gently, making sure not to boil it.
Seasoning and Serving
Finally, I seasoned the soup with salt and pepper to taste. I like to add a little extra black pepper for a kick. And that’s it! I ladled the soup into bowls and garnished it with some fresh parsley. Because celery adds flavors and feelings of umami and depth to a recipe.
The Verdict
The cream of celery soup with macaroni was a hit! It was creamy, flavorful, and so comforting. It is a favorite comfort food, especially with macaroni. This combo warms the body and soul. It’s definitely going into my regular recipe rotation. If you’re looking for a hearty and satisfying meal, give this one a try.
