Alright, so I’m gonna walk you through this yellowtail recipe I messed around with last night. It was surprisingly good, and I figured I’d share my process. No fancy stuff, just how I actually made it happen.

First off, I grabbed the yellowtail. Went to the local fish market, you know, the one that always smells kinda fishy but has the freshest stuff. Told the guy I wanted some yellowtail for, like, searing. He gave me a good-looking fillet, nice and pink.

Now for the fun part: the searing. I heated up some sesame oil in a pan until it was smoking hot. Like, really hot. Then I carefully placed the yellowtail in the pan and seared it for, like, 30 seconds on each side. You want a nice crust, but the inside should still be pretty much raw. That’s the key.
After that, I took the yellowtail out of the pan and sliced it thinly against the grain. Then I arranged the slices on a plate and drizzled a little more of the marinade over them. And finally, I sprinkled the chopped scallions on top for some color.
And that was it! Honestly, it was way easier than I thought it would be. The yellowtail was so tender and flavorful, and the marinade gave it a nice little kick. I served it with some steamed rice and a side of seaweed salad. Pretty decent meal, if I do say so myself.
