So, I tried making this Chicken Bacon Ranch Casserole with Potatoes thing the other day. It sounded pretty good, you know, chicken, bacon, potatoes – what’s not to like, right? I figured I’d give it a shot and see how it turned out.
First, I grabbed some chicken breasts and cut them up into these little bite-sized pieces. Then I tossed them into a hot pan with some oil and cooked them until they were all nice and browned. While the chicken was cooking, I got started on the potatoes. I peeled a few of those bad boys and diced them up into cubes, roughly the same size as the chicken. Oh, and I preheated the oven to 350 degrees Fahrenheit. Good thing I did that before.
Next up, the bacon. I fried up a bunch of bacon until it was crispy, then I let it cool off a bit and crumbled it up. Gotta have that crispy bacon! In a big bowl, I mixed the cooked chicken, potatoes, and bacon together. Then I added a whole bunch of shredded cheese – I used cheddar and Monterey Jack because that’s what I had. And of course, I dumped in a good amount of ranch dressing. Mixed it all up until everything was coated real good.
I greased up a casserole dish and poured the whole mixture into it. Spread it out evenly and then popped it into the oven. It needed to bake for about 25-30 minutes, just until it was all bubbly and the cheese was melted and slightly browned on top.

Steps I Did

The chicken was tender, the potatoes were soft, and the bacon added that awesome smoky flavor. And the cheese and ranch? Come on, that’s just a winning combo right there.
