Alright, folks, let’s talk about this broccoli chicken and rice casserole I made in my slow cooker. I’ve been seeing these recipes floating around, and, you know, I had to give it a shot. I’m all about easy dinners, especially during the week. So, a crock pot recipe? Sign me up!
Getting Started
First things first, I grabbed my ingredients. Nothing fancy, just the usual suspects:
- Chicken breasts (I used like, three, because we’re hungry people)
- A big ol’ bag of frozen broccoli florets (fresh would be fine too, I was just lazy)
- Cream of chicken Soop
- Long-grain Rice.
- Some shredded cheddar cheese (because, cheese)
- Salt, pepper, garlic powder – the holy trinity of seasoning, am I right?
The Process (It’s Super Simple)
I literally threw the chicken breasts into the bottom of my slow cooker. No chopping, no nothing. Just straight in there.
Then, I dumped the broccoli on top. Again, easy peasy.
After that, I prepared the rice.

Next, I mixed the cream of chicken soup with a some water. I poured that lovely sauce all over the chicken and broccoli.
Then, I sprinkled in my seasonings. Don’t be shy with the garlic powder, folks. It’s good for the soul.
I put the lid on that bad boy, set it to low, and walked away. Seriously, that’s it. I let it cook for about 6-7 hours. You could probably do high for like, 3-4 hours, but I like to let it do its thing all day.
Almost There…
Once the chicken was cooked through (and falling apart, which is what we want), I took it out and shredded it with two forks. Super easy.
I tossed the shredded chicken back into the slow cooker and stirred everything together. Make sure that chicken and broccoli are all coated in that creamy goodness.
Finally, I sprinkled a generous amount of cheese on top. Because, why not? I put the lid back on for just a few minutes, just to let the cheese get all melty and delicious.

The Result
And that’s it! Seriously, the easiest dinner ever. It’s creamy, cheesy, and comforting. My family devoured it. I’m definitely adding this one to my regular rotation.
