Alright, listen up, y’all! We’re gonna talk ’bout some easy dinners, the kind you can whip up quick, even if you’re tired as an old dog after a long day. I ain’t got time for fancy stuff, and neither do you, probably. So let’s keep it simple, like good ol’ country cookin’. We’re talkin’ easy on the go dinners, ya hear?
First thing’s first, you gotta have some go-to meals in your head. None of that cookbook nonsense, unless it’s got pictures and big print! I like things I can make with stuff I already got layin’ around. You know, like them noodles? Yeah, spaghetti! But we ain’t makin’ no fancy sauce. We’re doin’ it the quick way.
You ever heard of that… uh… “Ah-lio and Oh-lio”? Sounds fancy, but it ain’t. It’s just noodles with garlic and oil! That’s it! You boil up them noodles, and while they’re cookin’, you heat up some oil in a pan. Chop up some garlic – not too fine, I like it chunky – and toss it in the oil. Let it sizzle a bit, but don’t burn it, or it’ll taste bitter, like my old neighbor used to be! When the noodles are done, you drain ’em and throw ’em in the pan with the garlic oil. Toss it all together, maybe add a little bit of that red pepper if you like it spicy. Boom! Dinner’s ready! It fills your belly and don’t take long. That’s what we are looking for.
That’s what I call a good, quick dinner.

- Heat oil, add garlic.
- Mix noodles and oil.
- Eat!
Another thing I like to do is keep some cooked chicken or beans around. You can buy them chickens already cooked at the store now. That’s a real time saver, let me tell you. If you got some cooked chicken, you can make a salad, or a wrap, or even just eat it with some bread. Beans are good too, especially if you add a little bit of onion and some spices. Canned beans are your friend, they last long and are cheap as dirt. Just open the can, heat ’em up, and you’re good to go. I usually put them in a pot. Ain’t using them fancy microwaves. They heat food all weird.
And don’t forget about eggs! Eggs are a lifesaver when you don’t know what to eat. You can scramble ’em, fry ’em, boil ’em… heck, you can even make an omelet if you’re feelin’ fancy! I like to scramble mine with some cheese and maybe some chopped-up vegetables if I got any in the fridge. Takes just a few minutes, and it’s good for ya. They say eggs are bad, then they say eggs are good. I say eat what you want! That’s what I always said. If it tastes good eat it.
Now, for somethin’ a little different, you can try those… uh… what do you call ’em… those “torti-yahs”? Yeah, them flat bread things. You can put anything in them! Leftover meat, cheese, beans, veggies… whatever you got! Just wrap it up and you got a dinner on the go. My grandkids love these things; they can eat them with one hand while they are playing them games on the TV. I don’t get it, but as long they are eating, it’s good enough for me. I don’t have time to cook all day. Farming life makes you tired.
And if you’re really in a pinch, there’s always sandwiches. Peanut butter and jelly, ham and cheese, tuna salad… you name it! Sandwiches are easy, cheap, and you can eat ’em anywhere. Just make sure you use good bread, not that squishy white stuff that tastes like nothin’. I like that whole wheat bread myself. Feels like I am eating something healthy. Makes me feel better about all the bacon I ate for breakfast. You got to find some balance in life, I guess.
Oh, and don’t forget the snacks! Sometimes, you just ain’t hungry enough for a full meal, but you need somethin’ to tide you over. That’s where snacks come in. Things like nuts, or them cracker things. Get the ones that are hard, not soft. They taste better. Or some fruit, like apples or them little purple things… what are they called… grapes? Yeah, them little purple things. Fruit is good for you, they say. Keeps the doctor away. I don’t know about that. Doctors are expensive, and I still eat apples! But it’s nice and sweet, so I eat them anyway.
So there you have it, a few ideas for easy on the go dinners. Remember, it ain’t about bein’ fancy, it’s about gettin’ somethin’ good and quick on the table. Now go on and get cookin’! Or don’t cook! Just eat whatever you got, I ain’t the boss of ya!
