Okay, so, today I’m gonna share how I made this super easy pierogi casserole in my crock pot. Seriously, it’s a lifesaver on busy weeknights.

First things first, I grabbed all the stuff I needed. This is what I used:
- One bag of frozen pierogies (the Mrs. T’s kind, usually)
- A can of cream of mushroom soup (or cream of chicken, whatever floats your boat)
- Some shredded cheddar cheese (about a cup, maybe a little more – I eyeball it)
- A chopped onion (yellow or white, doesn’t really matter)
- A package of cooked kielbasa sausage, sliced
- A little bit of milk or sour cream (just to thin out the soup)
- Salt and pepper to taste
Alright, so the prep is super simple. I started by spraying my crock pot with some non-stick cooking spray. Didn’t want any sticking issues later on, you know?
Then, I took about half of the frozen pierogies and dumped them into the bottom of the crock pot. No need to thaw them, just straight from the freezer. Next, I scattered half of the chopped onion and half of the sliced kielbasa over the pierogies. After that, I sprinkled about a third of the cheddar cheese on top.
Next up, I repeated the layers. The rest of the pierogies, the rest of the onion and kielbasa, and another third of the cheese. Basically, just use it all up!
In a separate bowl, I mixed together the can of cream of mushroom soup with a splash of milk (or a dollop of sour cream if I was feeling fancy). Just enough to make it a little thinner, so it spread easier. Then I poured that mixture evenly over everything in the crock pot.
Finally, I topped the whole thing with the remaining cheddar cheese. Gotta have that cheesy goodness, right?
I put the lid on the crock pot and set it to low for about 6-8 hours. You can also do it on high for 3-4 hours, but I usually prefer low and slow. I like to start it in the morning before work and come home to a ready-made dinner.
Here’s the tricky part: depending on your crock pot, you might need to adjust the cooking time. You’ll know it’s ready when the pierogies are tender and the cheese is all melted and bubbly. Give it a poke with a fork to check.
When it’s done, I usually let it sit for a few minutes before serving. Sometimes I’ll add a dollop of sour cream on top, or maybe some chopped green onions if I have them on hand. It’s seriously good comfort food, and the best part is, it’s so easy! Cleanup is a breeze too, which is always a win.
Seriously, give it a try! It’s a total crowd-pleaser, and it’s one of those recipes you can easily adapt to your own tastes. You could add some bacon, or different kinds of cheese, or even some veggies. Get creative with it!
