Today, I made seafood ramen, and let me tell you, it was way easier than I thought it would be. Seriously, the whole thing came together in like 20 minutes, which is perfect for a weeknight when you don’t wanna spend forever in the kitchen.
I started with instant ramen because, well, who has time to make noodles from scratch? I also picked up some shrimp and scallops from the store since they cook up real quick. The key to good ramen, I’ve found, is this stuff called “kansui.” It’s basically lye water, and apparently, it’s what gives ramen noodles that chewy texture. I just followed the instructions on the package, no biggie.
First, I cooked the seafood. I just tossed the shrimp and scallops in a pan with a little oil and sautéed them for a few minutes until they were done. While that was going, I boiled some water for the ramen. Once the water was boiling, I added the noodles and the flavor packet. After the noodles were cooked, which only took like 3 minutes, I added the cooked seafood and some chopped green onions. I also like to add a soft-boiled egg sometimes, but I skipped it today.
The Special Sauce
Oh, I almost forgot! The broth is super important too. Usually, I just use the flavor packet that comes with the ramen, but today I also added a spoonful of this “tare” stuff. I don’t know what’s in it, but my friend told me to try it, and it did make the broth taste a little richer.

- Combined everything and enjoyed!
