Okay, so today I decided to make something easy and comforting. I went with a chicken rice and broccoli casserole, and the best part? I threw it all in my crock pot. Seriously, the crock pot is a lifesaver when you don’t want to spend all day in the kitchen.

Getting Started
First, I grabbed everything I needed. This is what my counter looked like:
- Chicken breasts (about 3, boneless and skinless)
- A can of cream of chicken soup
- A can of cream of mushroom soup (you could use two of the same, whatever you like)
- Some chicken broth (maybe a cup or two)
- A cup of uncooked rice
- A bag of frozen broccoli florets
- Some shredded cheddar cheese
- Salt, pepper, garlic powder – the usual suspects
Putting It All Together
I started by spraying the inside of my crock pot with some cooking spray. No one wants stuff sticking to the sides, right?
Then, I put the chicken breasts at the bottom. I seasoned them with salt, pepper, and a little garlic powder. Nothing fancy.
Next, I dumped in the cream of chicken and cream of mushroom soups. I added some chicken broth to thin it out a bit – I just eyeballed it, probably around a cup and a half. I gave it a good stir to mix the soups and broth together.
After, added a cup of uncooked rice and gave it a good stir.
Then, I tossed in the frozen broccoli. No need to thaw it, just straight from the bag.
Time to Relax
I put the lid on the crock pot, set it to low, and walked away. That’s the beauty of slow cookers, right? I let it cook for about 6 hours. You could probably do it on high for 3-4 hours, but I wasn’t in a rush.

Almost Done!
After 6 hours, I checked on the chicken. It was cooked through and super tender. I took it out of the crock pot and shredded it with two forks. Then I put the shredded chicken back into the pot.
Finally, I sprinkled a generous amount of shredded cheddar cheese on top. I put the lid back on for about 15 minutes, just long enough for the cheese to melt and get all gooey.

And that’s it! I scooped out a big serving of the cheesy, creamy, chicken-y, broccoli-y goodness. It was seriously delicious, and so easy to make. The rice was cooked perfectly, the chicken was tender, and the broccoli wasn’t mushy. Total win! This is definitely going into my regular rotation of easy weeknight meals.
