So, I saw this recipe online called “Poor Man’s Husband Casserole” and I thought, why not give it a shot? I mean, I love a good casserole, and if it’s budget-friendly, even better! I gathered all the ingredients, which were mostly things I already had in my pantry.
First, I browned some ground beef in a big skillet. While that was cooking, I boiled a pot of egg noodles. Nothing fancy, just your regular noodles. Once the beef was all browned, I drained the grease and mixed in some cream of mushroom soup. I also added a bit of milk to make it a bit more creamy. I let that simmer for a while. Then I drained the noodles and added them to the beef mixture, stirring everything together until it was well combined.
Next, I greased a casserole dish and poured half of the mixture into it. I sprinkled some shredded cheese on top – just some cheddar I had in the fridge. Then, I added the rest of the beef and noodle mixture and topped it with more cheese.

- Mix beef with cream of mushroom soup and milk
- Combine noodles and beef mixture
- Layer in a casserole dish with cheese
- Bake until bubbly and golden
The Final Step
I popped the casserole into a preheated oven at 350 degrees and baked it for about 20 minutes, or until it was all bubbly and the cheese was melted and slightly golden. And that was it! I took it out of the oven, let it cool for a bit, and then served it up.
Honestly, it was pretty darn good for such a simple and cheap meal. My family loved it, and it was definitely filling. Plus, it made a lot, so we had leftovers for the next day. I’d say this “Poor Man’s Husband Casserole” is a winner in my book. It’s definitely going into my regular meal rotation.
