Alright, so I decided to throw together that hungry jack casserole thing today. Felt like something hearty, you know? Didn’t have a solid plan, just kinda winged it based on the name.

Getting Started
First thing, gotta get the oven going. Cranked it up to like, 375°F (around 190°C I guess?). While that was heating up, I grabbed my trusty 9×13 inch baking dish. Sprayed it down with some cooking spray. Don’t want stuff sticking, pain to clean later.
Then, dug around for the ingredients. Found a tube of those refrigerated biscuits – yeah, the ones you whack on the counter to open. Also got out some breakfast sausage, eggs, milk, and shredded cheese. Cheddar seemed right.
Cooking the Bits
Tossed the sausage into a skillet. Didn’t even bother crumbling it perfectly first, just broke it up with a spoon as it cooked. Browned it pretty good over medium heat. Once it was cooked through, drained off most of the grease. Left a little in for flavor, always do.
While the sausage was sizzling, I dealt with the biscuits. Popped open the tube – always makes me jump a little. Unrolled the dough and just cut each biscuit into quarters. Simple enough. Just used a knife, nothing fancy.
Putting it Together
Okay, assembly time. Scattered the cooked sausage evenly over the bottom of the greased dish.
Then, I took those biscuit pieces and just dotted them all over the sausage. Tried to spread ’em out, but didn’t stress about perfection. It’s a casserole, it’s supposed to be messy.
Next up, the egg mixture. Cracked about six eggs into a bowl. Poured in maybe half a cup of milk? Whisked it all together. Added a pinch of salt and pepper. You gotta season the eggs, right? Poured this mixture all over the sausage and biscuits in the dish. Tried to cover everything evenly.

Finally, the cheese. Grabbed a big handful of that shredded cheddar and sprinkled it all over the top. Probably used about a cup, maybe a bit more. You measure cheese with your heart, I always say.
Baking Time
Carefully slid the whole thing into the preheated oven. Set a timer for about 30 minutes. Might need more, might need less. Ovens are weird like that. Just gotta keep an eye on it.
Checked it around 25 minutes. The top was getting golden brown, and the eggs looked set when I gave the dish a little jiggle. The biscuits puffed up nicely. Pulled it out right around the 30-minute mark.
The Result
Let it sit on the counter for maybe 5 or 10 minutes. Smelled pretty good, gotta say. Sausage, biscuits, cheesy eggs. The whole deal.
Cut into it with a spatula. Held together reasonably well. Served up a square. It was exactly what you’d expect – hearty, savory, filling. The biscuits were soft inside, crispy on top where the cheese melted. Sausage added that nice salty kick.
Overall? Yeah, it worked. Pretty straightforward comfort food. Nothing groundbreaking, but solid. Cleaned up the plate, so I guess you could call it a success. Definitely a decent way to use up some sausage and those canned biscuits.
