So, I saw this chicken yellow rice casserole thing online and thought, why not give it a shot? Sounded simple enough, and my family loves rice.

Now, for the rice, I am using yellow rice. I added some broth to the skillet and brought it to a boil. Then, I poured in the rice and stirred it all together. I reduced the heat to low, covered the skillet, and let it simmer for about 20 minutes, or until the rice was cooked and the liquid was absorbed. Easy peasy.
Putting It All Together
Once the rice was done, I mixed in the cooked chicken. Then, I spread the mixture into a baking dish. I sprinkled some shredded cheese on top because, well, cheese makes everything better, right?
Baking Time
I popped the baking dish into a preheated oven at 375°F (190°C) and baked it for about 15-20 minutes, or until the cheese was all melted and bubbly.
Serving It Up
Finally, I took the casserole out of the oven and let it cool for a few minutes before serving. It smelled amazing, and it tasted even better! The family loved it, and it was a hit all around.
