Okay, here is my sharing about the “meal one” topic:
Today, I really wanted to cook a meal for myself, and I didn’t want to order takeout. So I thought, let’s see what I could whip up. I’m calling it “meal one” because, well, it’s the first meal of the day that I cooked by myself.
Starting The Day
First, I opened the fridge and took a look at what I had. Some sweet potatoes, a bit of broccoli, and some bacon that was about to expire. I figured I could make something out of that. I mean, who doesn’t love bacon, right? I also found some leftover rice from yesterday’s dinner. Perfect!
Getting Things Ready
I washed the sweet potatoes and poked some holes in them with a fork. Then I wrapped each one in a damp paper towel and popped them in the microwave. While those were cooking, I chopped up the broccoli into small pieces. I also diced the bacon. Easy peasy.
Cooking Everything Up
Once the sweet potatoes were soft, I took them out and let them cool a bit. In the meantime, I fried the bacon in a pan until it was nice and crispy. I set the bacon aside and sautéed the broccoli in the same pan with some of the bacon grease for extra flavor. It smelled amazing!
Putting It All Together
I split open the sweet potatoes and fluffed the insides with a fork. I mixed in the cooked broccoli and some of the leftover rice. Then, I loaded each sweet potato with the mixture and topped them with the crispy bacon. I also sprinkled some salt and pepper on top.
The Final Result
It looked pretty good if I say so myself. I took a bite, and man, it was delicious! The sweetness of the potatoes, the crunch of the bacon, and the slight bitterness of the broccoli all went together perfectly. I was pretty proud of myself for making something so tasty out of simple ingredients.
