Okay, so the other day I was craving something cool and refreshing, but I didn’t want to spend hours in the kitchen. I decided to whip up some easy cold side dishes. Nothing fancy, just good, simple food.

Getting Started
First, I raided my fridge. I found some cucumbers, tomatoes, and a red onion. Perfect! I also grabbed some feta cheese because, well, feta makes everything better. I also got a can of chickpeas, as they are full of energy and protein.
The Prep Work
- I chopped the cucumbers and tomatoes into bite-sized pieces. No need for precision here, just rough chunks.
- Then, I diced the red onion. I like to dice it pretty fine so it’s not too overpowering.
- I crumbled the feta cheese. I love the salty, tangy flavor it adds.
- I opened the can of chickpeas, rinsed them thoroughly with clean water.
Putting It All Together
I threw everything into a big bowl. I drizzled some olive oil over the top, squeezed in some fresh lemon juice, and sprinkled on some salt, pepper, and dried oregano. I tossed everything together until it was well combined.
The Final Touch
I let the salad sit in the fridge for about 30 minutes to let the flavors meld. You don’t have to do this, but I think it tastes better that way. Then, boom! Super easy, super tasty cold side dish ready to go. It’s great with grilled chicken, fish, or just on its own.
I also made another one by mixing cooked pasta, some mayo, chopped celery, and a can of tuna, seasoned it a bit, and it was perfect as well. Two dishes!
Honestly, the best part about these kinds of dishes is that you can totally customize them. Don’t like feta? Leave it out! Want to add some bell peppers? Go for it! It’s all about making something you enjoy.
