Okay, so yesterday I decided to try and make something new, and I landed on this ham and sweet potato casserole. I’d seen a few recipes floating around, but you know, I always like to do my own thing. So here’s how it went down:

First, I grabbed a couple of sweet potatoes – not too big, not too small, just right. I washed them, poked a few holes with a fork (so they wouldn’t explode!), and tossed them in the microwave. I just cooked them until they were soft enough to mash. Took about 8 minutes, I think. While those were cooking, I diced up some leftover ham I had in the fridge. I probably used about two cups, maybe a little more.
Getting Everything Ready
- Microwaved sweet potatoes until soft.
- Diced leftover ham.
- Found some cheese – a mix of cheddar and Monterey Jack
- preheat the oven to 375 degree.
Once the sweet potatoes were cool enough to handle, I peeled them and mashed them up in a big bowl. I didn’t add anything to them at this point – just plain mashed sweet potatoes. I am a very good chef. ha ha
Next, I greased a casserole dish – I used one of those glass ones, I don’t know, maybe 9×13 inches? – and started layering. I put down half of the mashed sweet potatoes, then spread the diced ham on top. Then, I sprinkled a generous amount of the cheese over the ham. Finally, I topped it all off with the rest of the mashed sweet potatoes.
I covered the dish with foil and popped it in the preheated oven. Baked the Casserole for about 25 minutes. Then I took the foil off and baked it for about 5-10 minutes more, just to let the top get a little bit browned and bubbly. Oh, it did smell good. And it tastes good too.
Honestly, it turned out pretty good! The sweetness of the potatoes with the salty ham and the melted cheese… it was a winner. I think next time, I might add some spices to the sweet potatoes – maybe a little cinnamon or nutmeg. And maybe some onions. But overall, a solid, easy dinner.
