Okay, so the other day I got this idea to make a casserole. Not just any casserole, though. I wanted something with green beans and artichokes. I’d never really combined those two before, but it sounded good in my head. I had some green beans lying around, and I figured, why not try something new?
First off, I grabbed about a pound and a half of fresh green beans. I also picked up some frozen artichoke hearts because using fresh ones seemed like way too much work. Plus, the frozen ones are already prepped and ready to go. This is gonna be easy, I thought. I preheated my oven to 350 degrees Fahrenheit. Gotta have that ready for later.
I started by washing the green beans and snapping off the ends. I think that is the most time-consuming part of this whole thing. While doing that, I heated up some olive oil in a big pan and tossed in a few cloves of minced garlic and some chopped onion. I love the smell of garlic and onions cooking. While this is heating, I began to chop the artichoke into hunks.
Once the onions were soft, I added the green beans to the pan. I stirred them around, letting them cook for about 10 minutes. Then, I added the artichoke hunks to the pan. I also threw in some bread crumbs – about half of what I planned to use – and a good amount of Parmesan cheese. Then I mixed everything and let it cook for another 10 minutes, stirring occasionally. Oh, and I sprinkled in some salt and pepper, too. Can’t forget that!
After that, I poured the mixture into a casserole dish. It was looking pretty good at this point. I sprinkled the rest of the bread crumbs on top for that nice, crispy texture when it bakes. Then, I covered the dish with foil. Into the oven it went. I set the timer for about 45 minutes. Waiting is probably the second hardest part of this whole recipe!
While it was baking, I cleaned up the kitchen a bit. Might as well make the most of that time, right? And honestly, when the timer finally went off, the whole house smelled amazing. I took the casserole out of the oven, let it cool for a few minutes, and then dug in.
The result? It was pretty darn good! The green beans were tender, the artichokes added a nice tang, and the cheese and bread crumbs gave it a perfect, comforting finish. This string bean and artichoke casserole turned out to be a winner. I’ll definitely be making this again. Maybe next time I’ll try adding some different spices or herbs. The possibilities are endless!
