Okay, so I was messing around in the kitchen the other day, trying to come up with something different for a get-together. I had a bunch of squash sitting around, and I figured, why not try to make an appetizer out of it? I’d never really done anything like that with squash before, so it was a bit of an experiment.

Getting Started
First, I grabbed a butternut squash – I like the shape and the flavor. Then I washed it, peeled it (that was a bit of a workout!), and chopped it up into little cubes, maybe about an inch or so on each side. It took a while, but it was kind of relaxing, you know?
The Process
- Toss with Olive Oil: Once I had all these little squash cubes, I threw them in a big bowl and drizzled some olive oil over them. Just enough to coat them, not drown them.
- Seasoning Time: Then came the fun part – seasoning! I sprinkled on some salt, pepper, and a bit of garlic powder. I also added a pinch of cinnamon, because I thought it might give it a nice, warm flavor.
- Roasting: I spread the squash out on a baking sheet in a single layer. I popped it in the oven, which I’d already preheated to around 400 degrees Fahrenheit. I let it roast for about 20-25 minutes, flipping the pieces halfway through so they’d get nice and brown on all sides.
Finishing Touches
While the squash was roasting, I whipped up a quick dipping sauce. I just mixed some plain Greek yogurt with a little bit of honey and a squeeze of lemon juice. Super simple, but it tasted really good with the roasted squash.
Once the squash was tender and a little caramelized, I took the oven out. I tested it was cooked with a fork.
I arranged the roasted squash cubes on a platter and put the yogurt dip in a little bowl in the center. And that was it! It turned out way better than I expected. The squash was sweet and savory, and the dip added a nice creamy, tangy element.
The color turned out great, a really nice deep orange, made it look really appetizing.
It was a hit at the get-together! Everyone seemed to really enjoy it, and it was something a little different from the usual appetizers. Definitely something I’ll be making again!
