Okay, so this weekend I really wanted to try something new for breakfast. I’ve been seeing these breakfast casseroles all over my Pinterest, and I finally decided to give it a shot. I had some sourdough bread that was about to go stale, so this “breakfast casserole with sourdough bread” thing seemed perfect.

Getting Started
First, I grabbed that sourdough loaf. It was pretty hard, but I knew it would soften up in the casserole. I cut it into cubes, maybe about an inch or so big. I didn’t measure, just eyeballed it.
Prepping the Ingredients
- I whisked together like, eight eggs in a big bowl.
- Then, I poured in some milk – I think it was about a cup and a half, maybe a little more. I like it creamy.
- Added a dash of salt and pepper, just your basic stuff.
- I fried up some bacon until it was nice and crispy, then crumbled it into the egg mixture.
- I also sauteed some onions and bell peppers, because veggies, you know?
- Finally, I shredded a bunch of cheddar cheese. Gotta have cheese!
Putting It All Together
I greased a baking dish – a 9×13 inch one – with some butter. Then, I spread the sourdough cubes evenly across the bottom.
Next, I poured the egg mixture over the bread, making sure everything was nice and soaked. I sprinkled the sauteed veggies and the rest of the cheese on top.
Baking Time!
I covered the dish with foil and popped it in the oven. I baked it at 350 degrees for about 30 minutes. Then, I took the foil off and baked it for another 15-20 minutes, until it was golden brown and the cheese was all bubbly.
The Finished product
Oh man, it smelled SO good. I let it cool for a few minutes before cutting into it. It was amazing! The bread was soft on the inside but had a nice crispy crust, and the cheesy, eggy, bacony goodness was just perfect. Definitely making this again!
