Alright, let’s talk about my morning routine, specifically getting breakfast sorted. I call it my “breakfast hilo” just because, well, some days it feels high effort, some days low, but it gets the job done. Today was one of those straightforward mornings.

Getting Started
First thing, dragged myself out of bed around 6:30 AM. Usual stuff, splash water on my face, get dressed. Then, straight to the kitchen. It’s the most important stop, right? Opened the fridge to see what we were working with. Looked like eggs, some decent bread, bit of cheese left, and an avocado that was just about perfect. Okay, decision made. It’s gonna be a classic egg-on-toast situation, maybe jazzed up a bit.
The Cooking Part
So, I grabbed two eggs from the carton. Got my trusty non-stick pan out, put it on the stove. Medium heat, always medium. Too high and you burn things, too low and it takes forever. Put a small knob of butter in the pan, let it melt and sizzle a bit. While that was happening, I popped two slices of that bread into the toaster. Set it to a medium brown, maybe a notch higher.
Cracked the eggs straight into the pan. I like mine sunny-side up, but sometimes I break the yolk – happens to the best of us. Today, thankfully, they stayed intact. Let them cook slowly. You gotta watch the whites, make sure they set properly. While the eggs were gently frying, the toast popped up. Perfect timing.
Took the toast out, placed it on a plate. Grabbed that avocado, sliced it in half, scooped out the good stuff onto the toast. Smashed it down a bit with a fork, nothing fancy. Added a pinch of salt and pepper right onto the avocado. By now, the eggs looked ready. Whites were cooked, yolks still runny. Used a spatula, carefully lifted them out, and placed one egg on each slice of avo-toast.
Finishing Touches
Remembered that bit of cheese. Grated a little bit right over the top of the hot eggs. It melted just slightly. Looked pretty good, actually. Poured myself a big glass of water – trying to drink more water these days. Sat down at the table, finally ready to eat.
And that’s pretty much it. My “breakfast hilo” for the day. Took maybe 10-15 minutes total? Simple, filling, gets me going. Clean up was easy too, just the pan, the plate, and the fork. Done and dusted.
